Do you know more detail about process behind Reorganization Database ? and is there any options to customize process Reorganization Database ?
( let say for example .. after doing some modifications schema, I just want to specific/ only part of all part data apply to Reorganization Database)

If you're referring to taking only some of your changes to deploy to your production databases, then you can utilise patch versioning to help control which of your changes you want included in any given release. If you're referring to only reorging in some of your changes in your development environment then the answer is no you can't apply partial changes.

ie: The Jade Database reorg processing will reorg in all currently pending changes for all schemas for a given Jade Database.
